Low Fat Chicken Ingredients :
  • 2 cooked boneless, skinless, chicken breasts
  • 1 can Rotel tomatoes (not drained)
  • 1 bell pepper, diced
  • 1 onion (Vidalia is best), diced
  • 1 tsp. minced garlic
  • 1 tomato, diced
  • cooking spray or 1 tsp. of olive oil
  • corn tortillas
  • sour cream (low-fat or fat-free)- optional
  • shredded cheddar cheese - optional
Low Fat Chicken Instructions
Coat the skillet in cooking spray or 1 teaspoon of olive oil. On medium heat, add the diced bell pepper and onion to the skillet.

Sauté until the peppers have softened enough to be cut easily with a spatula. If the skillet becomes too dry, a few teaspoons of water may be added to prevent sticking.

Add the minced Garlic, diced tomato, and can of Rotel. While the above ingredients are cooking, shred and add cooked chicken to the skillet.

Cook until the juice from the Rotel has thickened. Set aside the cooked fajita filling in a covered bowl. Enjoy!

Heat the corn tortillas. Place fajita filling in the middle of your warm tortillas and serve. Top with sour cream and shredded cheese, if desired.

This recipe is very easy to modify to your personal preferences. You can add or decrease ingredients as you like. Rice also makes an excellent addition to this meal. Enjoy !

  • 1 cup of low-fat shredded cheddar cheese
  • 1 cup of boneless skinless shredded chicken breast
Low Fat Chicken Instructions:
Place two corn tortillas on a serving dish. Spread 1 cup of shredded low-fat cheddar cheese over one of the corn tortillas. Then add 1 cup of boneless skinless shredded chicken breast to the cheese and corn tortilla.
Place the second corn tortilla on top of what you have so far. Put the quesadilla into the microwave for 30-45 seconds or until all cheese is melted.

  • 1 1/2 lbs. boneless skinless chicken breast
  • 1 white onion (medium size)
  • 8 oz uncooked (1/2 box) vermicelli spaghetti
  • 2 oz shredded low fat Parmesan cheese
  • 1/4 teaspoon allspice
  • 1/2 teaspoon basil
  • 2 teaspoons garlic powder (at least)
  • 1/2 jar Heinz fat-free chicken gravy (6 oz)
  • 1 tablespoon flour
  • 6 oz low-fat sour cream
Low Fat Chicken Instructions:
First of all cut the chicken breast into 3/4 inch squares. Next is to sauté in small amount of vegetable oil over medium to medium-low heat. And then dice onions and add to chicken.

Cook chicken thoroughly, testing by cutting largest piece - juices should no longer run pink and chicken will be tender.

Sprinkle liberally with garlic powder, basil and allspice; stir in.

Stir in chicken gravy, reducing heat to a simmer. Sprinkle with flour and stir in water to achieve desired thickening. Do not rely on sour cream for thickness.

Simmer for 5 minutes over low heat, stirring in 2 oz of Parmesan cheese. Fold in sour cream and remove from heat.

Cook spaghetti according to package instructions. Drain and rinse with cool water. Top individual portions of spaghetti with Chicken Alfredo combination and then sprinkle remaining Parmesan on top. Enjoy the low fat chicken !

* 4 5-ounce skinless, boneless chicken breasts
* 2 tbsp lemon juice
* 1/2 tsp cumin
* 1/2 tsp dried coriander

* 1 15 ounce can low-sodium chick peas/garbanzo beans, well rinsed and drained

  • 2 1/2 lb low fat chicken; pieces, skinned
  • 2 chicken bouillon cubes;
  • (Borden Low Sodium)
  • 1 tb margarine
  • 1c green pepper; diced (1 med. pepper)
  • 1c radishes; thinly sliced
  • 1c pineapple, raw; chunks, canned, unsweetened
  • 1/2 c pineapple juice
  • 1ts light soy sauce
  • 2 tb flour
  • ds pepper
  • 4 1/2 c rice; cooked
  • chow mein noodles; optional

Simmer the low fat chicken in water with bouillon cubes. Remove meat from bones and cut into chunks. Save 1 cup of chicken broth. While chicken is cooking, melt margarine in frying pan or wok and saute the radishes, green peppers, and pineapple until crisp tender, but not brown. (Put rice on to cook.)
Mix 1 cup saved chicken broth with 1/2 cup pineapple juice and 1 tsp. soy sauce. Add to pan.
Mix flour with 1 Tb. cold water and stir to remove lumps.
